Actually most cheese (*read: aged cheese) are low in lactose because it's already been broken down by the commensal bacteria.

Unless you're a dirty poor and buy the cheap cheese from the dairy section of wall-mort.

I’m lactose intolerant and there’s plenty of cheese that’s high quality that will cause me 8hrs of pain. The dry cheeses typically have low lactose. Soft cheeses have more.

Ah, I was speaking about aged cheeses (≥ 1 year). Thought I put that in there, but... ¯\_(ツ)_/¯

I once tried 10 year aged extra sharp cheddar. It was great, but not worth the price increase over the 2 year aged cheddar.

I find diminishing returns after 7 years. I did try a 20 year aged once. It's a nice thing to try once.

Eyes when they nucleate naturally. Some eyeless Swiss cheese is sliced and stamped with holes.
