You can 100% get sued for intentionally shooting someone in a leg and causing them disability. If you really believe your life is in danger you should be shooting center mass which is what they train you in concealed carry classes. I tend to carry mostly in bear country, but if I had to shoot someone out in the woods who was attacking me, can't say I would tell anybody. They'd never find them.
